Before asking about what branch is better for giving GATE, you should know that if you are targeting for Govt. PSUs you can't get into them regardless of the branch you give gate in, because only B. Tech in ME students could get the opportunity to work in PSUs. You can still try your luck though.
Also, you should see where your interest lies because at the end you would have to do M. Tech in that course only. GATE through PI is difficult because you will have to get a very good rank (AIR 30-50) to get into top IITs for M. Tech or else you will end up in newer IITs.

It will depend upon your rank. Because every college has a cutoff for every branch which you get according to your rank.Last year the rank for EWS goes upto AIR 690 . As u have not mentioned your rank so here, Given below is the link which will give you the idea that at what rank you will get the IIT Madras or not.

Yes, you can get admission to M.Tech based on your GATE 2021 score. GATE score is valid for 3 years. You can get admission in an institute accepting GATE score to pursue M.Tech. There are various state level counselling for admission to M.Tech based on GATE Score such as TS PGECET, AP PGECET, TANCET etc. You can apply for state level counselling. But the counselling process has already started in states like Telangana and in other states the counselling process is already concluded. You need to apply for admission next year based on GATE 2021 score.
There are limited details that can be corrected in GATE 2022 application by paying an additional fee. And the details that can be corrected are as follows
You cannot change the year of graduation in GATE 2022 application.

See, Biotechnology is a branch that is mostly focused in chemical engineering pronciples and applied biology that are considered in the sense of living. See, you can grow and study this field but after that you can grow more and more in future without any problem.
The average package lies in the range of 4 to 6 lakhs and the salary lies in the range 25 thousand to 2 lakhs. It depends upon the skills.

You're in 2nd semester means now you're in 1st year . The Govt exams you are interested for have different syllabus .. but , yes .. some common subjects you can start preparing from your current academic year such as English , Aptitude , static GK etc, after your semester study hours ! But .. you must to be focused first that in which Govt exam you have kept in your 1st preference to crack .. based on your goal you can continue your preparation while studying in college .
GATE exam mainly taken for higher studies as well as for jobs in PSUs( most for B.Techs) .
and SSC CGL/ APSC you can give after your graduation .

There is no limit to preparation time period to score good marks in GATE exam.
It all depends on a candidates detemination, motivation and the zeal to clear the exam.

Based on your GATE subject first download the syllabus
Go through the Syllabus
Prepare a detailed list of weightage for each topic
Prepare a proper learning and revision schedule
Solve related problems
Try solving PYQs and mock test papers.
If you are targetting GATE 2022 please prepare a 3 month schedule. If not you may start with small portions daily and save the last 3 months for revisions and tests.
