Please be mindful that UPES is more rank-centric than marks. The candidates are called for counseling based on the rank obtained in the UPESEAT exam.
The rank cut-off varies every year owing to the factors listed below:
Below are some of the top branches of UPES and their respective cut-off ranks. This data has been collected from different sources and might change as per the pointers listed above.

Additionally, please note that your scorecard will also denote the number of people that have the same rank as you. In this case, your board PCM percentage + UPESEAT rank will be taken into account.
If you clear the above criteria and there is a seat available in your desired branch well and good.
If there is no seat available in your first preferred branch you can select your second preferred branch and keep the first one on the waitlist. Sometimes the waitlist does get cleared off and you get your first preferred branch.

It is hard to predict the branch-wise cutoff as it depends on the no. of candidates who are shortlisted for counseling. You will be able to secure a particular branch based on your UPESEAT rank and your board PCM percentage. The better the rank, the more likely you are to secure the branch of your choice.
NOTE: There are also other factors to take into account, like vacant seats (if not enough seats, you will put on a waitlist), in case two people have the same UPESEAT rank- in this case, a better PCM percentage candidate will be prioritized.

Even though you have a good score I wouldn't recommend applying through direct admission. There are just 10 percent seats for board-merit candidates, plus there will be candidates that might have scored the same as you even more than you. Hence, direct admissions are a little risky.
Rest be assured, with 80%+ in boards plus your JEE mains percentile, (a rank list is also prepared as per JEE marks of a candidate) there is a fair chance you might get CS but not the top specializations like CCVT.
In addition, it is always best to apply through UPESEAT rank to be on the safe side as 80 percent of the seats are filled using the rank. On top of that, if you have written your exam well, you can secure CSE with a specialization under 9k rank.
Talking about amity Lucknow and UPES. UPES is better.
The fee structures of both are almost the same, but UPES offers 10+ CSE courses and the placement opportunities are better in UPES.

Getting a admission in college and getting a seat are two similar things. The college you get a a seat is where you will get an admission. Since, you are an engineering aspirant, so let us take an example related to that only. You will be appearing for JEE Mains, Now, you apply for JoSAA counselling. You manage to get your name in the list of candidates who got a seat. After this, if you can go further and take the admission at the particular college, where you got the seat.
