No, you will not be offered reservation if you haven't mentioned in the application that you are a OBC category student.
One suggestion which I can gave you is that write a mail to iiser authority regarding the issue you are facing but there are very little chances but it is good to try then doing nothing.

As per the information in the IISER website,any kind of incompletion in the application form will thereof be rejected and not be considered for counseling.

I understand that you have applied for the IISER aptitude test but somehow have missed out on mentioning your caste category which for your case is OBC as mentioned by you and so to answer your question, firstly I would ask you to see if there is any correction window that is due to open soon and if so then make the necessary correction in that window. If there is no correction window then I would advise you to address the management or authorities of IISER through a formal mail mentioning your discrepancy and request them to make the necessary correction in your application form. Then you would be able to get your caste category verified during the counselling process.
Also be informed that it is advisable not to wait for caste category change during the counselling process as only supporting documents are verified during the counselling and no changes are made as such during that stipulated period of time.

The IISERs do not release any cutoff scores or ranks. But students generally analyse from the answer key and make prediction over the years.
Well according to the previous year trends, you probably can get a seat in IISER TVM(as last year, students who scored 80-85 got IISER TVM) in the first round or second round of allotment depending on the fact if its your 1st/2nd/3rd preference. If IISER Pune(generally, 100+ is required) is your first choice then you may not get get in the first three rounds...you may get other IISERs but can eventually use the float option to get IISER Pune. And you are also from the reserved category(If you belong to the non-creamy layers of OBC), so chances are good. You may also get IISER Mohali(A student scored 85 and got it in last round)and Kolkata(generally 95+ marks is required for general students). The newest IISERs too.
This year the IAT questions were difficult from the other previous year question papers. So, be hopeful that the closing rank may go down. And the seat intake from SCB stream has also increased by 25%. Also, the board cutoffs were relaxed to 60% this year due to the pandemic.
According to me, you will most probably get an IISER of your choice(IISER TVM surely). And you have the float option to get the IISERs of higher preference.

No, Biology is not compulsory in iiser, in case any subject is not compulsury for iiser test.
You can take any of the subjects.Especially since the common subjects- Physics and Chemistry - are not crazily tough, hence a lot of people will score well here. Also, if you are a Math / Bio background student, you will obviously be expected to score well in your specific subject.
Hence, for a math background student, it is somewhat essential to ensure that you take atleast some points from the bio section to supplement your total score. This will give you a good advantage over a large number of people.

I am also facing the same problem.I think that if the authorities are informed about this,then there might be a change in any one of the exam.I just wrote an email to both the authorities on an address found on the website.you may also do it.If more candidates are there in the same situation,then it may work.So please ask more people to do it.

At this marks it is very difficult to get IISER. There is very less chance to get IISER. IISER cutoff has own criteria. I depend on some factors like school board (CBSE,ICSE and other state board), minimum score by the applicants and also depend on category.
If the candidate belong to CBSE board and from general category then candidate should score approximately 420 marks, if Candidate belong to OBC then Candidate score should be approximately 400/410 marks, if candidate are from SC/ST then the score is approximately 370marks.
And as per your marks it is very difficult to get IISER.
