For JEE advanced examination you require birth proof. There are two options for submitting the birth proof ,one can be your 10th certificate or a birth certificate . so even if you don't have a birth certificate there is no problem you can provide the 10th certificate for the documents

Congratulations first of all ,for clearing India's toughest competitive exam,with such a good rank.
Now,according your rank ,it is going to be too tough to stand a chance in IISER Kolkata.Since the cutoffs of this year might increase,it is going to be too tougher.

Yes off course you should fill up first those three IITs in the top 3 choices for getting into them in the JOSAA Counselling process. One important thing to consider is that, always keep in mind to fill up in the top 10 first those colleges with the
Rohith, you have a good chance of getting BioTech. in IIT Kharagpur. This is based on your rank and previous year cutoffs. The branch closes at around 3100. But you can definitely get the 5 years course of BioTech there.
But again it depends on the number of students
You may also fill provisional certificate (in the PDF link) and then give the original one by 5th June 2019.
